WHITE TRUFFLE

-Peridium

Smooth, pale ocher colour, sometimes with greenish or ocher-yellow shades.

 

-Gleba

Shades from brown to light hazel, sometimes with red dots, crossed by a dense texture of very thin light veins.

 

-Shape

It can be roundish, elongated or flattened: it depends by the type of soil in which the truffle has grown.

 

-Size

Very variable, the pieces have different weight and even oversteps 1 kilo.

 

-Ripeness

From September to December.

 

-In the kitchen

Very intense and unique aroma with reminiscents of methane or fermented cheese: it is perfect raw on warm dishes to exalt the entire aroma.

 

-How to recognize it

Smooth peridium, light colors, peculiar scent and growth in Autumn.
