Cream of green or black olives:
for toast, with the addition of butter, or to flavour rice and pasta dishes.
Strips of red onion and saffron: Ideal with cheese, best if flavoured.
Cream of dried tomatoes: for toast of rice and pasta dishes. A suggestion? Gently fry garlic, add fresh tomato, capers and a couple of anchovies. Cook gently and add two spoons of cream of dried tomatoes. Add the pasta to the pan containing the sauce and toss to coat thoroughly.
Green sauce: In Florence this is served on "lampredotto", boiled meats or Florentine-style. Try it on toast or pasta.
White saffron sauce: excellent for rice and pasta dishes or meat and fish.
Basil pesto: for rice and pasta dishes and pizza.
Sauces:
Condiment for pasta and rice with a drizzle of extra virgin olive oil or a knob of butter.
