TRUFFLE HUNTERS FROM 1800s
STEFANIA CALUGI company was founded in 1987: Stefania Calugi, descended from a truffle hunters family since the second half of the 1800s, undertook fresh truffle sale after 1985, and when the business was expanded by the introduction of frozen and preserved products there was necessary to build the current establishment and business structure.
Today the company offers a wide selection of fresh/frozen/preserved truffles and mushrooms, together with vegetables in oil, jams, salts, oils and other earth fruits.
Stefania Calugi's commitment has always been characterized by raw materials rigorous selection and processes aimed at maintaining genuine flavors that combine Tuscan tradition with contemporary creativity.
Our history and our great passion have led us to share with people (both professionals and lovers) the truffle hunting feelings and atmosphere: the realization of this desire was possible from 2013, when we bought 30 hectares organic certified truffle fields that supplies fresh truffles to our company and constitute the perfect setting to organize truffle hunting together with an expert truffle hunter and a trained dog.
The truffle is a Tuber genus hypogeum fungus and belongs to Tuberaceae family: it is born and lives underground and develops near the roots of some species of forest plants and shrubs, particularly oaks, holm oaks, poplars, lindens, willows and hornbeams, with which it establishes a symbiotic relationship called mycorrhizae that is expressed in the nourishment that truffle draws from them, subtracting water and mineral salts. The truffle is formed by an enveloping coat of the fruiting body called peridium which can appear smooth or wrinkled, and a fleshy internal mass called gleba, which can have different colors (white, pink, brown, black) and which highlights the veins that delimit the sac where the ascomycete, large cell clusters containing the spores, are
