“Aristà” pork loin with truffle and beans

A traditional Florentine recipe born in the farmhouses of the past and revisited by the expert hand of Michelin-starred chef Marco Stabile. The pork, preserved in salt, was boiled in water and aromatic herbs and then placed, in fillets, in jars of olive oil so that it could be preserved as long as possible. The meat thus took on the appearance of tuna.

Stefania Calugi proposes this ancient recipe in combination with Tuscan beans, which were never missing from peasant tables, but revised with slices of black scorzone truffle. A complete starter or main course, enclosed in a jar that releases the ancient flavours and precious scent of the truffle. The characteristic raw materials – pork, beans, precious truffle – are strictly Tuscan.
