-Peridium
Warty, consisting of black warts smaller and less pronounced than Scorzone.
-Gleba
Hazelnut colour, crossed by many very branched white veins.
-Shape
Round or oval.
-Size
It is generally smaller than Scorzone Truffle.
-Ripeness
From October to December.
-In the kitchen
The tasty aroma makes it particularly versatile, so it is perfect both raw and baked.
-How to recognize it
It is very similar to Scorzone truffle: this is why some scholars consider it an Autumn variety of the same type; the differences -not always easily perceptible, are related to the appearance (peridium, gleba, shape and size), to the perfume and especially to the later ripening period.
